My favorite childhood author? Dr. Seuss. No doubt about it.
Today would be his 108th birthday! What better way to celebrate than reading your favorite Dr. Seuss books like…
And eating Green Eggs and Ham for breakfast! (without the green food coloring, though).
Happy Birthday, Dr. Seuss! These "green eggs" are actually just scrambled eggs full of vitamins! I promise you don't taste the spinach at all.
Ingredients
- Eggs
- Big handful of spinach
- Sliced Ham
Instructions
- Put your eggs and spinach in a blender, and blend until smooth and green.
- Heat a skillet to medium heat and lightly grease to keep the food from sticking.
- Pour the egg mix on the pan and scramble until cooked through. Place on serving plate.
- Lightly brown the sliced ham until warm, and place next to eggs on plate.
- Read some Dr. Seuss books while enjoying your festive breakfast!

In elementary school, we always celebrated Dr. Seuss’ birthday. The cafeteria served their own green eggs and ham (thinking back now, that sounds disgusting! and rubbery!). We dressed up as Dr. Seuss characters with crazy hats, hair, and socks, and then read a few of his books. His birthday is a day I like to celebrate every year (my birthday is the day after, so it is double the celebration).

Im embarrassed to say I never read a book of Dr. Suess, (Im from europe originally). All I hear is great things so it sounds like I need to catch up 😀

I LOVE this post! Dr. Seuss is my absolute favorite children’s book author. He was such a wise, silly, thought provoking, compassionate genious of a writer. As a person, too, I’m sure. I love all of his books, but my fondest memories are from when my dad would read The Sneetches on the Beaches, Too Many Daves, The Zax and What Was I Scared of. Oh, and of course, Horton Hatches an Egg. I keep these tattered, love-worn books out of reach of my kids,but every now and again I bring them out and read to them, and for a little while I get to be a kid again! This was such a great idea that I hope you won’t mind me sort of stealing it and writing a Dr. Seuss post on my blog?

That is awesome!! Aaah, I will def try this as soon as possible! Everyone will be surprised… I loved Dr. Seuss when I was a little girl. I remember making green eggs with my kindergarten classes and the teachers put in food coloring… I didnt think much of it then but now that I do… EEW. lol, but spinach is awesome.
