When I got home from my trip, there was a package sitting on my doorstep…
The new Blissful Bites Cookbook from Christy Morgan at The Blissful Chef!
I was excited to look through the book and try the recipes. Christy wrote the book beautifully with tips and tricks, fun quotes, thoughtful insights on “bliss,” and it is all sorted into Spring, Summer, Autumn, and Winter recipes. I know exactly what recipes to make depending on the time of year and what’s in season.
I want to experiment with so many of her recipes! I decided to try the Chinese Cabbage Roll-Ups with Peanut Sauce first:
Delicious. Had a great ginger flavor, and the peanut sauce complimented it well. Reminds me of a fresher, lighter lettuce wrap from P.F. Chang’s or California Pizza Kitchen without all the oil.

I love homemade, raw, coconut ginger snaps. Ingredients: shredded coconut, sesame seeds, dates, and dried ginger. Yum!

My favorite vegan recipe is curried lentils with yams and chard. I’m actually making it today because I have company coming.
My favey vegan recipe is actually from a restaurant in Portland (where I live) for their cashew & corn pizza made with cornmeal crust. It’s probably my favorite meal ever. P.S. there’s an ad on your page right now for a “Velveeta Cheesy Skillet” & it says “just add ground beef” major lolz, I don’t think that ad knows he’s not talking to the right group of people 🙂

If it came down to ONE recipe, it would be my grandmother’s recipe for apple butter. Just apples cooked down with apple cider until its about 1/3 of what you start with. Add cinnamon and nutmeg to taste. Delicious. Needs no sweetner. Tastes like home to me….

My favourite vegan recipe would be CCK genius blondies ( http://chocolatecoveredkatie.com/2011/05/18/chocolate-chip-blondies-and-theyre-good-for-you/ ) or my super quick version of garam masala, super easy and quick, can diced tomatoes, can chickpeas and garam masala spices (or cumin, cinnamon, chili powder if you don’t have a garam masala spice mixture of sorts). Also this recipe is just my super lazy and quick way of doing it and is probably not even close to the deliciousness of the real thing.

Yes! The High Protein Cookie is made with chickpeas, pb, and unsweetened chocolate. Extremely easy.

My most recently found beloved vegan recipe is for spinach stuffed shells…OMG so good! I found it at http://www.pbs.org/food/author/weberj/. Jenna Weber is a food genius, much like you! My husband and I were licking the tofu sauce from the blender as if it were mom’s leftover frosting on the beaters!
