Have you made Breakfast Oat Cakes yet?
They are easy to make, portable, versatile, filling, tasty, and healthy.
This batch I made “muffin-style” by baking it in muffin tins with liners instead of on a cookie sheet. Works just fine.
I added 2 mashed bananas to the batter and a handful of fresh blueberries.
Perfect for breakfasts on-the-go, brunches, or even an afternoon snack.
Thought-provoking, mind-prodding question of the day:
When you are in a rush in the morning, what do you usually grab to eat? Or do you eat breakfast?
I usually like to plan ahead if I know I am going to be busy the next morning by making some Oat Cakes, a smoothie, or some High Protein Cookies. However, if I don’t have time to do this, I will grab a piece of fruit (usually a banana) and some nuts.

I will go out of my way to wake up an hour earlier than need be to ensure that I have time to prepare myself a great breakfast. It IS my favorite meal of the day!

I usually have a couple hard boiled eggs, a banana and peanut butter if I’m in a rush out the door. Haven’t had to do that in so long though because I’ve been working nights and from home, so breakfast has been quite the drawn out luxury lately.

These breakfast oat cakes are fantastic! Not only do they look gorgeous they are full of health-building ingredients. Love the ‘chia gel’ – brilliant! Banana lends the perfect amount of natural sugar and blueberries? YUM!!

I usually grab me a protein shake or a green smoothie if I have a little extra time. YUM! Or one of my Protein Granola Bars. Those are quick and easy!

I always eat breakfast, even if I’m not hungry. I worry that I’ll be starving in the middle of work/class otherwise. If I’m low on time, I usually have toast with peanut butter or quickly scarf down some yogurt.

OH My YES I have made you oat cakes.
I make them every Sunday so I have a variety of oaty bliss at my desk each day.
lately I’ve been adding pecans, cinnamon and raisins.
I just bake the blob of dough as a blog and cut it up into scones!
