Happy Fourth of July!
And to my international readers-Happy Monday!
What better way to start the day than a gorgeous, festive, filling, nutritious breakfast?
I made the baked oats as the Recipe says, but I omitted the applesauce, spices, and nuts this time.
Then I sliced some bananas, strawberries, and blueberries and topped it in the shape of American the flag.
It turned out wonderfully and everyone loved it. It is a snap to make, simply mix it up and stick it in the oven!
Perfect for a brunch, and the leftovers make excellent energy bars.
Thought-provoking, mind-prodding question of the day:
What are your plans for today?
Mine includes making a version on this (you will see it tomorrow), making a huge batch of this, and then having party with friends and family!

Yum, this looks delicious! Everything you make does, actually. 😉 So the recipes works just fine without applesauce?

haha I LOVE THAT! Why didn’t I think of making baked oatmeal for Canada Day? Oh well, next year 🙂 Enjoy!
spoonfulofsugarfree says
Yeah! I was thinking that you could probably make it for all countries-raspberries, strawberries, or cherries for canada.

What is the texture of the baked oatmeal? Is it dry-ish?
spoonfulofsugarfree says
Hey Katherine!!
The bake oatmeal is not dry at all! Very moist, in fact!

I can’t pull up your baked oatmeal recipe. Would you mind emailing it to me???
Thank you- Tina in Los Angeles, CA
p.s. I used to be a major sugar addict. When I finally realized I was overweight because of all my sugar consumption. I went sugar free a while ago and since then I have gone from a size 12 to a size 6/8. I don’t even crave it anymore.

Tina,
Sorry you couldn’t pull it up! Here’s the recipe:
Baked Banana Oatmeal
~This Baked Oatmeal is vegan, dairy-free, gluten-free, and of course, sugar-free!
Ingredients:
2 cups regular rolled oats
round 1/2 teaspoon baking powder
1 tsp cinnamon
1/2 tsp nutmeg
2 Tablespoons ground flax (optional)
1/2 cup chopped nuts (optional-I used a mix of almonds and walnuts)
1 1/2 cups milk of choice (i used almond milk)
1/2 cup applesauce
1 or 2 bananas
Simply mix all of the ingredients together except the banana(s). The batter will be thick. Now, you can use 1 banana mashed and mix it into the batter, and then top with sliced bananas; or just top with one sliced banana; or just use one mashed banana mixed into batter. For this batch, I just topped with 1 banana. Pour batter into a lightly greased glass dish (or whatever you have lying around), and bake in the oven at 350* for 30-35 minutes.
You can even make the batter the night before, and then throw it in the oven the next day. Just make sure to wait and add the baking powder right before you bake it so that the chemical components don’t die overnight.
