I just went strawberry picking yesterday and ate them until I was sick ahha! But, I’m making fresh whipped cream and shortcakes for a dessert tonight! Coconut milk is amazing, I have a can right now and plan to add some to a smoothie soon and make a curry sauce with it as well.

Looks like we’re on the same page. I had this exact thing yesterday. And I was so proud because I used a real coconut and made my own milk for once! :p

      great minds think alike-no?

And WOW! How do you make your own milk??

        For sure! ๐Ÿ™‚

You crack the coconut, bake it to remove the shell, peel the skin and then chop up the meat. You put the meat in a food processor with about 1 C of hot (but not boiling water) and then let the processor run 20-30 minutes. Then you pour all of that into a towel over a bowl and squeeze the towel to get the liquid out. Your left with milk in the bowl and meat or shredded coconut in the towel. ๐Ÿ™‚ It takes a lot of time, but it was so fresh! I won’t do it all the time, but every now and then, it’s fun. I should do a post on this, huh? LOL
