Day 9: Iced Coffee

June 9, 2011 By Alex@Spoonful of Sugar Free

Welcome to day nine of the Sugar Free Challenge! Tomorrow is the last day for the challenge. Are you counting down the minutes or has it been easy for you?

Here is today’s sample menu:

Breakfast: One Size Fits all Pancakes with fresh sliced strawberries and Peanut Butter Cream.

I also had some Iced Coffee. I had some fun taking these pictures and watching the almond milk mix with the chilled hazelnut coffee:

The almond milk slowly seeps down through the coffee…Kind of looks like a root beer float!

Mix! Mix! Mix! Look at that nice foamy layer on top!

Lunch: Baked Sweet Potato with almond butter and cinnamon.

Dinner: Steak, Corn on the Cob, Mashed Taters, and Fresh Watermelon!

Dessert: Chocolate Cake with Peanut Butter Frosting

Thought-provoking, mind-prodding question of the day:

Do you like your coffee or tea hot or cold?

Although I like hot tea and coffee, I have been craving iced drinks lately. Probably because it is so darn hot here everyday now!

I love coffee at any temperature haha. But I usually enjoy it warm in the winter and iced in the summer. The only problem wig iced coffee if that I drink it way to quickly. At least when its hot I have to slow down a bit haha.
I also really like the idea of sweet potato with nut butter!!

I love hot coffee in the winter AND in the summer 🙂 Although sometimes I do get a random craving for an iced coffee! Or even better, an iced Americano! So good!

I don’t drink coffee. Love the smell of it, hate the taste. Have given up finding a way to like it and just enjoy the aroma instead (thankfully DH drinks it so I just enjoy “sniffing” his LOL).

The challenge has gone so quickly for me! I’m quite surprised. I’ve just finished making a version of chocolate bliss balls using agave syrup as a sweetener (first time I’ve used it). They are way TOO GOOD. I think they’d be pretty high in calories (being mostly almonds and coated in coconut) so have to be careful I don’t over indulge.

These sample menus are awesome! Ah, I want to eat that cake so badly. But I don’t have coconut flour. Do you think I could substitute something else?? Maybe oat flour?

      Kelsey,

I have tried oat flour and it works, but it is more grainy. Still tastes good, but make sure you grind the oats reeeeally well!

I don’t mind hot coffee in the summer as long as its morning. Later in the day I crave iced coffee, but hot coffee is so much easier to make so I end up sticking to that! That cake looks even more delicious than your last batch with all those layers, yum!

dude, your dinner is summer on a plate! i like my coffee/tea hot ’cause i slurp it down too fast if it’s cold!
i do, however, freeze decaf coffee for ice in my protein shakes. your meals look so good & that coffee + almond milk is like art! 🙂

I’m drinking homemade iced tea right now. Its delicious! I like my tea hot sometimes, and cold others times. All of it is good though!

I love hot coffee & hot tea, especially at the moment as it is so cold. In summer I put my coffee in the fridge as well as herbal teas so that they are nice and cold.

I’m really glad I took part in this! I really enjoyed it, and I found that after the first little struggle (to located sugar free items) it wasn’t that hard. Once you have all the sugar free stuff (and don’t have to look through 10+ loaves of bread to find one that doesn’t contain sugar or sweeteners) its really not that bad to grab and go a healthy sugar free breakfast/lunch/snack. The most challenging part was probably the shopping and trying to find something sugar free while out at the mall/cafe. Other than that it was great!
I think you should have another sugar free challenge in the near future and perhaps this time challenge people to do it for a month (maybe a 30 day month haha).
I will defs try to keep my diet low sugar from now on, and not buy products with hidden sugars. Why buy PB with sugar when the one without is so much better!?!?! and better for you.
Also YOU WERE AMAZING throughout this whole challenge with your daily menu ideas and recipes and emails! You really kept me motivated!! I’ve tried a few of your recipes now and they are great. I will be doing a post either tonight or tomorrow on the sugar free challenge too if you want more detail about my experience with it.
Thanks for doing this, and for being so great and supportive!
