Day 6: Monsters and Artichokes

Welcome to day six of the Sugar Free Challenge! I hope you are all doing well and having fun! Sometimes it can be hard to stick to the sugar-free diet over the weekend when there are many temptations from friends and family. Good job to everyone who did not give in! And if you did give in, keep your head held high and keep trying. You can do it!

Here is today’s sample menu:

Breakfast: One Size Fits all Pancakes. I added cinnamon and sliced bananas. The bananas had a nice caramelized edge.

Lunch: Heart Stopping Chicken Salad atop of a bed of spinach and served with sliced tomatoes, cucumbers, and apples.

Snack: Chocolate-Dipped Strawberry Smoothie.

Dinner: Spaghetti with Meatballs served on Broccoli with a side of cantaloupe.

Dessert: Artichoke with lemon juice. What?! Yes. One of my favorite treats/foods of all time is fresh artichokes. What a treat! Doesn’t sound like your kind of dessert? Try my Chocolate Cake with Peanut Butter Frosting.

I totally forgot to show you the gift I made my mom for her birthday! Here it is:

Not the best picture, but it is a phone holder. Perfect for her because she recently lost her phone case, and she loves monsters! I enjoyed making it, too. You will never guess what I wrote on her homemade card….”I Love You More Than Peanut Butter!”

    All of that food looks so good!! The weekend was actually easier for me because I was home and able to most of my food instead of having to order something because I was in NY for work.

    I love artichoke hearts, but I haven’t had whole fresh artichokes in such a long time. I remember my mom served them one time when I like 4 or 5 and I loved them. I should try them again soon!

    It’s not so hard when you get together with friends who are also sugar-free! I adore artichokes – just bought some this weekend, in fact. It never occurred to me to have them for dessert, but I can see why you would.

    And that cell phone holder is absolutely adorable. Nice job! Did you use a pattern?

    everything looks so delicious! i tried to cook an artichoke a while back and it was a total fail. I’m still not sure what I did wrong but there just wasn’t any “meat!”

    I made your chocolate cake recipe last night and it came out awesome! I think I kept it in the oven a tad too long because it was a little dry, but I plan on making it again and adding banana and cooking it less time. Thanks for the recipe! A treat that most people would not consider a treat is unsweetened chocolate. I’ve really grown a taste for it!

    mmm chocolate strawberry smoothie. My “treat” are prunes. I know, it sounds gross… but they are SO good if you give them a chance.

      Love prunes. I would eat them for dessert, too! Now I am into dried apricots!

    my i love artichokes! yep i am obsessed with hard boiled eggs, they are a portable treat that i get to have any time of day/night! weird but i love them!

    for special treats…I am addicted to dry roasted macadamia nuts. they are just so good as a snack or dessert or anytime. I only can buy this much at a time otherwise i won’t stop picking on them!

    raw or roasted hazelnuts is runner-up 🙂
