Oh so Tropical

Most everyone guessed correctly about what was in my breakfast bowl yesterday: kiwi, strawberry, mango, and unsweetened almond milk. However, there was mystery lurking in the bottom….chia gel! Hehe…I’m so evil…Now onto today’s post!

Oh so pretty…

Tropical Chia Pudding Parfait

~This parfait is Raw, Vegan, Dairy-free, Gluten-free, Nut-free, and, of course, sugar-free! 

Ingredients

  • 3 Tablespoons Chia seeds
  • 1/2 cup coconut milk
  • 3 Tablespoons unsweetened, shredded coconut
  • 1/2 cup chopped tropical fruit (I used mango, oranges, bananas, and pineapple)
Mix together the chia seeds and coconut milk and let sit for 20 minutes or until it resembles a thick pudding. In a glass, layer the fruit, coconut, and chia pudding.

Oh so yummy…

Oh so smooth…

Oh so tangy…

Oh so gorgeous…

Oh so sweet…

Oh so uplifting…

    Wow, that does look refreshing! I’ve never eaten or even heard of Chia seeds before so I’m not sure if I like them or not, but everything else sounds great. Is that something you concocted yourself or found the recipe somewhere? My wife and I have been eating healthy now for close to a year and are always looking for new great tasting foods to try and especially this one leading into summer.

      Well I heard about chia seeds from a friend of mine. She suggested putting them in water, so I tried this and then I started putting it in almond milk. I have seen other people do this, too, but it is very delicious! Perfect for summer!

    Gah! I thought I was being clever by saying coconut milk instead of almond milk to keep with the tropical theme! Fail! Haha oh well, but I bet that would be really good!
    Chia gel is interesting…. I just made banana pudding with chia seeds but I used less chia to liquid, now I am wondering if I should make it again with more and see what happens?

      Yes it would be fabulous!!! Maybe next time 😉

      But chia puffs up SO much, you really don’t need that much per liquid. It’s amazing, isn’t it?

    i used to do a weekly hike when i lived up in berkeley. i would be so focused, looking down at the trail and sometimes i would just glance up and realize i was surrounded by this lush beauty. it never failed to take my breath away. that’s what makes me feel alive – unexpected wonder.

    hey now, that’s cheating! I looked so close at that picture to make sure I wasn’t missing anything haha. I’m not a huge fan of chia seed gel unless I add crunchy things like granola into the mix. But I love it blended!!

    Oh my, I’m drooling. I just found out after going to a holistic doctor about my digestive issues that I have to avoid chia seeds (at least until I’m healed). No fun! Hopefully one day I’ll be able to have them again. They were one of my most favorite food additions in 2010!

    this looks so good! love the tropical theme. 🙂 ps fruit + unsweetened almond milk + cinnamon is my favorite breakfast right now. i was so excited when you had the same thing! mine was banana, orange, and raspberries this morning though.

    Actually, this lovely looking concoction is far from being sugar free since bananas, pineapple, mango, oranges and coconut all contain a lot of natural sugars. As a diabetic, this would definitley put me over the top (give me one quick!).

    So, no sugar added, would be a more apropriate statement! 🙂

    Oh my that looks….simply amazing. All that fruit has my mouth watering! I love fresh fruit…especially when the weather starts to warm up! This breakfast reminds me of summer!

      Hi Annahilla!

      I bought my chia seeds in bulk at my local health food store. However, I have also seen them in the “health food” section of my regular grocery store. Hope you find them!

    Ok, how the heck do you cut a mango properly?

      Haha…Hi Nikki!

      I just dice mine because the rind tastes very bitter. First I peel it and then cut the two sides off right next to the seed. Then I dice it from there! However, if you want to cut it like those fancy mango pictures you see, then leave the peel on and cut a slice right next to the seed. Cut this into cubes without cutting through the skin.

        Hmm, well the idea is easy enough. The times I have tried just have ended in a slippery mess where I shouldn’t even be trying to hold onto the knife haha!

        I think it might just be me though… Perhaps I need a mango anchor.

    Looks good! What’s the flavor of chia like? I’ve heard a lot about the texture from the blog world, but was curious if they’re nutty, flaxy, plain, etc. (Love your blog btw!)

      Welllll…..I don’t really taste the chia that much. The texture is like little bubbles. I love it because it feels fun in my mouth! If you chew it it is a little crunchy, but they are so small that you don’t really need to chew that much. Idk..but I like ’em!

      Seriously, buy them. They are so worth it. I use them in almost everything, and they are great in baked goods. I like chia a lot better than flax, and you only need a little bit at a time so it lasts a while. Plus, they are sooooo good for you 🙂
