Wow! I am amazed by the number of people who enjoyed my Grain Free Bitter Chocolate Cake for One! Thank you to all of you who “manned up” to the bitter chocolate cake (and actually liked it!).

Now, here is another idea for the chocolate cake batter:
Grain Free Bitter Chocolate Pancake Stack
~Using the recipe from the Bitter Chocolate Cake, you can make your own Bitter Chocolate Pancakes!
- 1 egg
- 1/4 cup cocoa powder
- 2 Tablespoons of squash puree, like pumpkin, sweet potato, or butternut squash
- splash of vanilla extract
- 1/8 teaspoon baking powder
- water
Mix all ingredients thoroughly and add a dash of water to make the right consistency. The batter should be thick. Make pancakes by pouring the batter onto a greased pan on medium heat. Flip when the pancakes get bubbly. Layer with chocolate mousse (recipe below) and top with cacao nibs!
Bitter Chocolate Mousse
- 1/2 cup milk substitute (like almond milk)
- 1 Tbs cocoa powder
- pinch xanthan gum
- ice
Blend ingredients together.
Alternatively, make Agar mousse. Recipe HERE.
Thought-provoking, mind-prodding question of the day:
Have you tried bitter chocolate yet?? If not, get on it!
What chocolate recipe would you like me to make next?
I really want to make the chocolate bread or pancakes but I don’t eat eggs, they tend to upset my belly… 🙁 Maybe a flax egg would work? And for your next chocolate recipe…hmmmmm….. how about using chocolate for something savoury? That would be super unique! I can’t wait to see what you end up doing!
People have told me that they used my recipe with a flax egg and it worked-so I am sure yours will work, too!
I just had the best mexican food the other day! It was a chicken dish with a mole sauce ontop (a blend of chocolate and spices). I should recreate that!
YUM!!! Love the pancake idea Alex! Baking bitter carob muffins as I type this. 🙂
Drool! Dark chocolate is definitely something I need to catch up on! 🙂
I finally tried the bitter chocolate. I put it in my morning hot cereal and it is good.
YAY!!! I am so glad you tried it and liked it, Stefanie!!!
Can this be made while avoiding chocolate and carob powders. Is there any other way to make this? A healthy way? And do you eat these for snacks or meals?
Well, by now you may know this (2 years later!) but cocoa powder is actually pretty healthy. It’s high in fiber and protein – lots better than plain flour. But if you don’t like cocoa, I’d imagine you could make this with any flour-like substance. Would taste totally different, but would still achieve pancake!
nice!! i finally took your recomendation…and got myself some caco nibs. hooray!! i don’t know what i should do with them though!
YAY!!!! THer are sooo many things to do with them!!! Put them in your wonderful oatmeal and yogurt bowls 😉
Hi – I love your recipes and your approach. How about a bitter double chocolate chip cookie??
i am sooo making this next time the chocolate cravings hit! ive got 100% dagoba waiting for me to enjoy 😉
I bow down to you! Love anything chocolate – bitter or not – although my stomach doesn’t love me for it 🙁
I must try the original recipe! 🙂
Hope your doing great!
oh YUM!!! love this!!!!!!!! putting on my “to make” list!
I’m so all over this! I think anyone who has a vagina loves chocolate! its a fact of life!
YUM! Chocolate pancakes…haha and I agree with Eden 🙂
I am waiting to figure out my stomach issues before I put eggs back in my diet, but can’t wait to try this! Maybe a double chocolate ice cream sandwich? That would sure be a challenge!
I also tried it and looooved it! I have been thinking that I should cut down on the “sweet” stuff. Seems like I add stevia to everything. This is the perfect thing for me! thanks so much!
i lovelovelove chocolate pancakes. i actually make chocolate + banana pancakes as a hangover cure some days 😉
happy new year!!

Yes, I tried it (as you so kindly pointed out up above!) and loved it, and have made it at least two or three times. I’ll be making it again, for sure!
now that its 2011 and im needing lots of sugar free recipes, im gonna be on ur blog 24/7! you are my number one go to girl <3
I tried the bitter muffins and they were good (smothered with almond butter!). Haha, love all your recipes, I’m going to try to eat less sugar this year so I’m looking up to your for recipes and advice! You’re awesome!
So much chocolate!! But not too much…you can never have too much. 😉 It all looks delicious.
interesting… ! It looks good
I’m totally going to man up soon enough and try to go hardcore bitter. I’m not scared! Okay.. only a little 🙂 I have to try it in pancake form though, genius! And mousse sounds good too. You’re just cranking out these bitter chocolate recipes, keep em coming!
I have made your cake on multiple occasions with a flax egg, and it is awesome! It doesn’t make a ton when I do it, so I wonder if maybe I need more liquid? Next time I will try making it as muffins instead. They look fun. 🙂
Wow! I made these this morning with egg substitute and ate it with a sauteed apple! It was delicious! Thanks!
This look SO good! 😀
I can’t wait to try these with unsweetened almond milk ice cream!
Oooh j’dor the idea of replacing flour with cocoa powder! Of course I would still pour a bowlful of maple syrup over these puppies (don’t hate me!), but since I do find most pre-sweetened chocolate too sweet (go figure), this is the perfect solution for my chocolate pancake dreams. Thanks for the great idea – can’t wait to try it out!
Liz,
ENjoy! I hope you like it 😀
