Bitter Chocolate Love

Wow! I am amazed by the number of people who enjoyed my Grain Free Bitter Chocolate Cake for One! Thank you to all of you who “manned up” to the bitter chocolate cake (and actually liked it!).

Now, here is another idea for the chocolate cake batter:

Grain Free Bitter Chocolate Pancake Stack

~Using the recipe from the Bitter Chocolate Cake, you can make your own Bitter Chocolate Pancakes!

  • 1 egg
  • 1/4 cup cocoa powder
  • 2 Tablespoons of squash puree, like pumpkin, sweet potato, or butternut squash
  • splash of vanilla extract
  • 1/8 teaspoon baking powder
  • water

Mix all ingredients thoroughly and add a dash of water to make the right consistency. The batter should be thick. Make pancakes by pouring the batter onto a greased pan on medium heat. Flip when the pancakes get bubbly. Layer with chocolate mousse (recipe below) and top with cacao nibs!

Bitter Chocolate Mousse

  • 1/2 cup milk substitute (like almond milk)
  • 1 Tbs cocoa powder
  • pinch xanthan gum
  • ice

Blend ingredients together.

Alternatively, make Agar mousse. Recipe HERE.

    I really want to make the chocolate bread or pancakes but I don’t eat eggs, they tend to upset my belly… 🙁 Maybe a flax egg would work? And for your next chocolate recipe…hmmmmm….. how about using chocolate for something savoury? That would be super unique! I can’t wait to see what you end up doing!

      People have told me that they used my recipe with a flax egg and it worked-so I am sure yours will work, too!

      I just had the best mexican food the other day! It was a chicken dish with a mole sauce ontop (a blend of chocolate and spices). I should recreate that!

    Can this be made while avoiding chocolate and carob powders. Is there any other way to make this? A healthy way? And do you eat these for snacks or meals?

      Well, by now you may know this (2 years later!) but cocoa powder is actually pretty healthy. It’s high in fiber and protein – lots better than plain flour. But if you don’t like cocoa, I’d imagine you could make this with any flour-like substance. Would taste totally different, but would still achieve pancake!

    I am waiting to figure out my stomach issues before I put eggs back in my diet, but can’t wait to try this! Maybe a double chocolate ice cream sandwich? That would sure be a challenge!

    I’m totally going to man up soon enough and try to go hardcore bitter. I’m not scared! Okay.. only a little 🙂 I have to try it in pancake form though, genius! And mousse sounds good too. You’re just cranking out these bitter chocolate recipes, keep em coming!

    I have made your cake on multiple occasions with a flax egg, and it is awesome! It doesn’t make a ton when I do it, so I wonder if maybe I need more liquid? Next time I will try making it as muffins instead. They look fun. 🙂

    Oooh j’dor the idea of replacing flour with cocoa powder! Of course I would still pour a bowlful of maple syrup over these puppies (don’t hate me!), but since I do find most pre-sweetened chocolate too sweet (go figure), this is the perfect solution for my chocolate pancake dreams. Thanks for the great idea – can’t wait to try it out!
