Healthy Twisted Pumpkin Roll

Another Pumpkin Recipe! Yay!

Don’t you just love pumpkin? One cup of pumpkin has 7 grams fiber, 2650 IU Vitamin A, 564 mg potassium! It also boasts a truckload of antioxidants like Alpha-carotene and Beta-carotene. What a wonderful winter fruit. Yes, science defines seed-carrying pumpkins as fruit. Not vegetables.

As a variation of my savory flourless-free crepe from Heather, I created a Healthy Pumpkin Roll!

Inspired by the back of a can of Libby’s Pumpkin:

Not-Your-Ordinary Pumpkin Roll

~This pumpkin roll can be used as a breakfast or dessert! It would be a perfect breakfast to impress guests during the Holidays. The recipe is flour-free, grain-free, gluten-free, dairy-free, and of course, sugar-free!

Ingredients

Serves 1

  • 2 eggs
  • pinch baking powder
  • 1/4 tsp cinnamon, plus more for garnish
  • 1/2 cup pumpkin puree
  • Optional: chopped nuts

First, lightly grease a pan for the stove. I used a cast-iron skillet. Next, turn the stove on medium heat. Whisk the eggs, baking powder, and cinnamon in a small bowl, and pour the mix into the skillet. Cover and cook for 2-3 minutes or until it is cooked through. There is no need to flip the crepe. Remove the crepe carefully from the burner and place on a plate:

Next, spread the pumpkin on the crepe. If you wish, you can heat up the pumpkin before spreading it. If you wish to add chopped nuts to the pumpkin, add some now.

Then, roll the crepe, and garnish with an extra scoop of pumpkin, cinnamon, and nuts (if using):

I am so excited to visit my aunt and grandparents in Arizona this Christmas. I haven’t seen them in two years, and am very excited to see them! I’m making them all gifts. I would tell you what they were, but I am afraid they might be reading this! Let me keep it a surprise!

Do you like surprises?

My sister is a big surprise person! She will not let anyone tell her what her gift is, and she will not tell anyone what she made/bought them. It is actually quite fun to tease her with this 😉

    Wow, this recipe looks awesome! My mother used to make a delicious pumpkin roll, but needless to say it was extremely decadent. I can’t believe you were able to make this without flour too. I think I’ll have to go get some canned pumpkin now…

    And I’m a big fan of surprises. So little genuinely surprises us that I like to keep people in the dark as much as possible. It’s more fun that way 🙂

      That is a good way to looks at surprises! I tend to be more lenient and not care, but I should care! Thanks. I will look at surprises that way next time!

    Ohhh nummm this looks good! I am so skeptical about making crepes with just eggs and no flour, but obviously I need to just give it a shot.

    I still have a can of organic pumpkin in the pantry… I’ll have to try this recipe for sure. By the way, I made my version of the coconut iced bark recipe and it came out delicious! I even brought a bag of it to my instructors at the yoga studio. They couldn’t get enough! I already have plans with my mother to make our own version of the bark to bring to our Christmas breakfast.     What a holiday happy idea… looks delish. BTW, I would be the spitting personality of you sister. My parents know by now that I DO NOT want to know anything about gifts ad surprises. Though in the past couple years I have had to help them a bit with my special gift requests (couldn’t exactly leave just up to my mom to purchase my camera-baby! I paid for half, anyway)!

    Awesome idea! I used to love those pumpkin rolls with cream cheese centers. Right now I’m not eating eggs, but will have to make this if I start eating them again – or if not, I’ll definitely have to come up with an egg-free version! I love it!

    I’ll celebrate Christmas with my parents, as always, and I’m looking very much forward to it because I only see them 3 or 4 times a year. Without my family, it doesn’t feel like Christmas.

    I have a love-hate relationship with surprises … I only like the nice ones. 😉 And I don’t like to be overwhelmed by too much surprise.

      I’m sorry it didn’t turn out as hoped! It’s not actually supposed to taste like a pumpkin roll, but like kind of like a pancake rolled with nuts and pumpin and spices!

    Wow! Just made one….these are dangerous!! Now I m not so glad I just tried these out…I think this is my new favorite obsession and I ll be eating a few of these a day. Yummy and addictive like pancakes! Gotta go make another one now!

    just made some! i used 5 eggs and a whole can of pumpkin because there are 4 of us. i also added some allspice and nutmeg. i just left them as pancakes and made some syrup with honey, maple syrup, cinnamon and butter.

    i should have made more! the kids went nuts for them!
