Welcome to day four of my Friends by Recipes Challenge! Today, I am sharing a recipe from my new friend from eat move love.
Blueberry Muffins-That-Take-The-Cake…Look
Ingredients:
- 1 cup flour
- 1/4 – 1/2 cup oats (optional)
- 1 tsp. baking powder
- 1/2 cup milk
- 1/2 cup applesauce
- 1 egg
- 1 tsp. vanilla extract
- cinnamon to taste
- 1/2 mashed banana
- 1/2 cup blueberries
- raisins (honestly, I don’t measure – just throw them in )
Method:
1) Preheat oven to 350 degrees F.
2) Mix all wet ingredients thoroughly in a bowl.
3) Add dry ingredients – flour, baking powder, oats, cinnamon. Mix thoroughly.
4) Add in blueberries and raisins.
5) Pour batter into muffin tin (with liners or lightly oiled).
6) Bake at 350 degrees for ~20-25 minutes.
Makes ~ 8-10 muffins (depends on the size you prefer).
7) Let cool. Then, EAT.
I used brown rice flour instead of regular flour to make them gluten-free, and they turned out great! They do taste cake-y!
I made my muffins mini! I also used frozen blueberries, and made them “bleed” on purpose to make them Purple muffins!!! Fun, Fun!
These were really yummy! I loved the cake-like texture! Who says you need sugar to eat cake? 🙂

Halloween is coming up! What do you plan on doing? Are you going to dress-up? Maybe I’ll wear this hat…
Also, do you get a lot of trick-or-treaters? I used to get a good number, but since we moved I don’t know if we will get any! Do you give out candy? Or do you just shut off the lights?

Halloween snuck up on us WAY too fast this year, and also it’s our son’s first real trick or treat year so we are doing the traditional dress up and walk the neighborhood deal. we are really excited to meet some of our “families with kids” neighbors.
Holidays are a blast with kids. We’ve missed Halloween for years but are really looking forward to it again!
I love how you used the frozen berries and let them bleed. pretty!

oh yes…definatly dressing up..i’m going to a costume/dance party!! so fun. and we NEVER get trick or treaters…we live WAY out in the country!

Those look tasty! Hey, I’m trying my hand at GF baking, using coconut or peanut flour. Any way to make my baked goods rise more? My muffins taste good but they are so dense and squat.

The muffins look so good! My husband and I always carve pumpkins and I roast the pumpkin seeds on halloween while we pass out candy. This is our first one with our daughter Annabelle, who is 6 months old, so we plan to dress her up as well. I have been eating sugar free for a couple months now and feel great – so I had a hard time buying the candy. I wish they had some good options for sugar free healthy treats that the kids would actually like. 🙂 I gave in and ended up getting Twix, Snickers and Skittles. I am reminded of the movie Bedtime Stories with Adam Sandler where the mom gives the kids gluten free wheat grass cake at a birthday party. I’m afraid I’m heading down that road!

I know exactly what you mean! I ask my little brother, “hey, would you like me to make a healthy dessert?” And he says, “I like your desserts, but can’t I just have the real, unhealthy thing sometimes??”

Haha, aw, at least your little brother likes your desserts. My little brother hates and refuses to touch anything that’s “healthy.” He’s nice about it, though. Maybe I’ll make a full-fat, full-calorie, completely unhealthy dinner/dessert one day, just for him.

Well I hope you had a better Halloween than I. my dad fell 12 feet, hit his head on concrete, and got knocked unconscious. My parents went to the hospital, while I stayed home and cleaned up. We didn’t get a ton of kids but some were actually excited about the organic candy.

just one question: when you sub the rice flour for wheat flour is it JUST brown rice flour or you use any gluten free flour mix with xanthan gum?

I love using frozen blueberries! I use them in waffles and pancakes and then they get all gooey, delish!
