#1 Friends by Recipes: Anita’s Oatmeals

Hi everyone! Here is the very first post for my Friends by Recipes Challenge. The challenge will last about two weeks, so come back every day to see a new, tasty recipe!

Anita suggested:

“You know what I started thinking this week ? Why not make a savory oatmeal ? Take the oatmeal and add a mashed sweet potato that has been roasted. I read on cara’s cravings, I think she put shredded zucchini into her oatmeal. I’ve also been thinking about pineapple and some of that coconut butter, like a pina colada oatmeal. As for savory oatmeal, I think almost any vegetable would work as a topping, maybe add some olive oil, salt, pepper. Some of the macrobiotic people eat vegetables for breakfast, why not?”

So, Anita, I made some Savory oatmeal:
Oatmeal cooked with shredded zucchini, and topped with a dollop of butternut squash puree, a drizzle of olive oil, and a sprinkle of salt and pepper!
And some Pina Colada Oatmeal:
Pina Colada Oatmeal cooked with coconut milk/cream. Chunks of Pineapple mixed in. Topped with shredded coconut (and a maraschino cherry for decoration-don’t worry, I threw that High Fructose Corn Syrup-soaked fruit in the garbage as soon as I finished taking the picture!) I also placed the oatmeal in a glass, and decorated it with a bendy-straw and a slice of lime. I think this oatmeal would taste best chilled, or “Overnight Oat Style”
Together, they make the perfect Oatmeal Meal!
Ahh...Relax by the pool...

What is your favorite oatmeal mix-in? I tend to change from day to day-I like to keep things fresh!
Also, what is the weather like in your part of the world? Here in Florida it was 90* today!!! As you can see, it is still pool weather here 🙂

    The savoury oatmeal sounds delish! I’ll have to try that 🙂
    My favourite thing to put on oatmeal is chunky almond butter. So good!

    thank you so much. you’re a genius. you should be on television. Oatmeal has opened up whole new vistas and it’s so healthy. When I eat it in any way shape or form, I feel like I’m really doing something good for myself. How did you like the taste of the savory and pina colada oatmeals. Were you happy with the results. They look so great !

      Oh-they were your ideas! 😉 But they were both really good-I loved the savory oatmeal!!! The Pina Colada Oatmeal was amazing, too, but I would definitely chill it next time before I eat it (then it would be more authentic!)

    my favorite is definitely banana or pumpkin with either almond butter, coconut butter, flax and coconut shreds, nuts, cashew butter, or nuttzo!

    I love adding cacao powder and banana (I call it my Chocolate Monkey Oatmeal). I’ve also simply cooked it with mixed berries which gives it a delightful sweet sauce without the sugar and turns the whole bowl a bright berry color. So fun!

    relax by the pool.. ahh now thats a memory i wish were a reality right now!! this oatmeal is fantastic- the type that u could totally add a lot of different things to it!! btw i wanted to comment wayyyy back (im slow on replying to my comments lately) that i loved how u said i was in ur dreams! and we were playing tennis! its funny cuz i definitely get blogger dreams and i should think about doing some sort of post on it sometime. its such a funny thing huh!! <3

    have to say I’ve never really branched out into the oatmeal arena…just tried pumpkin oats…and loved them.

    but savory oats…say even for dinner would be a new spin.

    I’ll log it down and give it a shot real soon (almost done with the low carb torture challenge)

    oh and it’s 50 degrees and drippy rainy bleh here.

    good for you for still getting pool weather…but really, I don’t mind the cozy weather here!

      That’s true! I went up to a midwest state last week-was super cold for my tastes (even got into the 30’s!!!) Blech…But I do like curling up in a sweater every once in a while!

    never would picture this! guess i just have a big ‘ol sweet tooth in the morn! the pina colada i could go for though! and banana oatmeal..is just THE BOMB>.i think it may never get old..along with goats milk. and you know pumpkin is good as well! 🙂 not to mention figs and apricots..
