One boring Wednesday evening I had the itch-the itching desire to bake!ย I baked for 3 hours straight and had a blast!
On the menu:
- Chocolate-Peanut Truffles
- Mini Cheesecakes “Surprise!”
- Chocolate Chunk Monsters
- Apple-Carrot Bran Muffins
I even wore a dorky fruit hat to bake in:
My mom bought the hat for me at IKEA.I have to say that I do love it! My family teases me, and my brother steals it sometimes…All for good fun! Plus, it is very comfy.
My creations of the night:
I gave them to my mom’s bible study group, and brought the leftovers to my tennis practice. They were a hit!

For the mini-cheesecakes I used the recipe found HERE. But instead of freezing it in a glass container, I put them into mini-muffins liners and froze them in the muffin tin. I made some strawberry cheesecake (mix with frozen strawberries and topped with a raspberry), blueberry cheesecake (mix with frozen blueberries and top with blueberries), and Key Lime Pie cheesecake (mix with lemon and lime juice and top with lime wedge).

I always have the urge to bake but most of the time restrain myself from doing so. Living on my own, I would have to give the goods aways and it can be a pain to haul all my books and baked goods to school. When I visit my family I am in the kitchen baking until my hearts content. It is relaxing for me even after a long day. Your goodies look good. ๐

Maybe you can find some kind of baking fundraiser to bake for? Or maybe cook some for a local girl scout troop or retirement facility? There is always someone to give goodies to!

Baking is DEFINITELY a stress reliever!! Sometimes I wish I had more reasons to bake, because sometimes my treats just go to waste ๐ But I love whipping something up in the kitchen as a way to relax! Oh and I love the hat ๐

Yes, I’ll admit, I do bake to relieve stress! In fact, last night I made my dad a chocolate chess pie.
What I do is I usually turn on the music real loud when no-one else is home and then get cooking in the kitchen!
Also, I’d like to go virtually sugar-free as well. I have some vanilla stevia drops on my Amazon wishlist, so I’m about to make the transition (I already nix most refined sugars)!
